EZ Pasta

I'm in the new momma phase where the freezer meals that I made and that were dropped off have all been eaten. The time to grocery shop doesn't really exist and our fridge looks like a ghost town. I scraped together this delicious pasta dish with things that were in the fridge and pantry and it was delicious.




EZ's Empty Fridge Pasta


1 pkg proscuitto
2 cloves minced garlic - I used pre-minced so a couple of teaspoons)
1/2 pound of any type of pasta - I used Cavatappi
4 oz of cream cheese
1 cup frozen peas
1/2 cup or so of grated Parmesan cheese
Salt
1 tbsp of olive oil



Bring water for pasta to a boil, while waiting cut proscuitto slices in to strips and separate.


Once water is boiling, throw in a handful of salt and toss in the pasta - cook until al dente.

While pasta is cooking, heat up olive oil in saute pan with a cover and saute proscuitto slices and garlic for a few minutes. Add in the peas and cook another minute or so until they start to defrost. Add cream cheese, a pinch of salt and cover pan and cover for a couple of minutes until it starts to melt. Add a ladle or so of the pasta water, depending on how thick you want the sauce, to thin out the cream cheese. You may want to reserve another ladle of pasta water in case you want to thin out the sauce a bit more once you add the pasta in.


When pasta is al dente, drain and toss with the sauce and parmesan cheese and Enjoy!

A sprinkle of some fresh minced flat leaf parsley would be good as a garnish if you have some on hand - I didn't.
